Currently, the Specialty Coffee Association describes specialty coffee based on its distinctive attributes and the value they generate, considering elements such as flavor, aroma, origin, producer, cultivation practices, and processing. That is, it goes far beyond a simple score.
What makes a coffee special?
There are several elements that can completely transform the experience of a cup.
1. Its origin
The place where coffee grows directly influences its characteristics.
Altitude, climate, soil, and growing conditions mean that coffees from different regions can develop completely different profiles.
Therefore, knowing the origin means understanding part of the story behind each cup.
2. The coffee process
After harvesting the fruit, another fundamental stage begins: processing.
Methods such as honey, natural, and different fermentation processes can modify the sweetness, intensity, aroma, and complexity that we ultimately perceive.
